Veganların Restoranlarda Karşılaştıkları Sorunlar Üzerine Bir Araştırma

Abstract

Bu çalışmada farklı tüketici gruplarının farklı beklentileri ve tercihleri olduğu gerçeğinden yola çıkarak yiyecek-içecek sektörünü ilgilendiren ve bugüne kadar araştırmalarda çok fazla değinilmeyen bir konu olan veganların restoranlarda karşılaştığı sorunları gün yüzüne çıkarmak amaçlanmıştır. Araştırmada veriler açık uçlu soru formu ile sosyal medyadaki vegan gruplardaki kişilerden toplanmış olup nitel analiz tekniklerinden içerik analizi ve betimsel analiz ile veriler değerlendirilmiştir. Çalışma sonucunda veganların restoranlardaki sorunlarının temel olarak menü içeriği, personel tutum ve davranışları ve genel olarak işletme ile ilgili olduğu ortaya çıkmıştır. Bu tüketici grubunun istek ve beklentilerine de ayrıca değinilmiştir

Considering various consumer groups have different expectations and preferences, in this study, It is aimed to bring out the problems that vegans face in restaurants, which is interested in the food and beverage industry and a subject is not mentioned much by the researchers. The research data was collected with open-ended questionnaire from people in the vegan groups in social media and analyzed using content analysis and descriptive analysis that are from qualitative analysis techniques. According to the result of the study it is found that the basic problems of the vegans at restaurants are about menu contents, staff attitudes and behaviors and business management. Additionally, the wishes and expectations of this consumer group are mentioned in the study.
